For grilling potatoes whole on the barbeque, you will want to triple wrap them in heavy duty tin foil before placing them on the preheated grill. This will help to protect them, as they will sustain high temperatures for nearly two hours before they are ready to eat. You will want to stab the potatoes in the deepest center of them to allow for steam release, and turn them often during the grilling process.
Grilling potatoes which have already been sliced or cubed is a somewhat more simple process, as they will not need as much time on the grill. A great tasting combination for this type of dish is to incorporate slices of onion and carrot to the potatoes, along with seasonings and a touch of butter, olive oil, or high quality cooking spray. This will not only prevent the food to sticking to the inside of the foil, but will enhance the flavors of the food. For grilling potatoes in this fashion, you will want to create a tightly sealed pouch around the ingredients by rolling all of the edges together. Allow a bit of space for the moving and expansion of hot air, and place the pouch over medium heat for at least twenty-five minutes. You may peel back an edge of the pouch to check for tenderness, but the vegetables should be steamed to perfection within one half of an hour.
There are also a few methods for grilling potatoes directly on the grates of your barbeque, but you will want to be prepared to watch them continually when preparing them this way. A light coating of high heat cooking spray should be added to your clean grill grates Before you turn the flame on. Remember that you should never spray these cans around an open flame. Once you have coated the grates and lit the grill, allow it to preheat for at least ten minutes. Take your slices, about ¼ inch in thickness, and season them to taste.
